Does your refrigerator door or shelf look like this?

Half-full of lots of different things? I always get on a kick of remembering to buy a certain condiment, every time I go to the store. 6 bottles of dijonnaise later, here we are. I recently made 2 recipes and used up a whole jar of salsa verde, had 2 delicious dinners and one less jar to clutter my door, everyone wins!
Turkey Burgers with Avocado Aioli (from Sweet Tea in Seattle)
mix 1lb. ground turkey with 1/2c. salsa verde
for aioli: mash one avocado with 1/4 cup mayonnaise and one clove garlic(pressed)
divide burgers into 4 equal sized patties, grill until done and melt a slice of pepper jack cheese on top. Top with one slice of tomato and avocado aioli.
Chicken Enchiladas with Salsa Verde(from me!)
Place 4 frozen chicken breasts in slow cooker. Top with 1 beer and remainder of jar of salsa verde. Cook on high for 6 hours. Shred chicken in crockpot and mix in 1/2 block of cream cheese. Remove chicken mixture and use tortillas(I used 7) to roll up chicken in a 9x13 greased pan. Shred remainder of pepper jack cheese on top of enchiladas and bake for 20 minutes at 350. Serve with black beans and rice.
* frozen chicken breasts slowcooked with salsa and beer is also delicious served over rice or used for anything you need to stuff with chicken, don't remember where I found this tip, but it has been a go-t0 for years! What are your favorite recipes to roll over ingredients into?
Oh wow. Both of these sound amazing. As in my stomach just growled while I was reading this! Yes my fridge door looks just like that! You are not alone.
ReplyDeleteAlways great to be productive, and multi-tasking to boot! Nice work, and thanks for the great recipes. :)
ReplyDeleteGreat ideas! We have about three jars of olives in our fridge from bloody mary nights when they don't get used. Any ideas?
ReplyDeleteDefinitely going to get Pass the Pigs and try it out. Thanks so much for the idea. :) Hope you're having a great day. Two hours until pinot for me! Yippee!
